AVIYAL RECIPE/KANYAKUMARI KALYANA SAMAYAL

AVIYAL

         

             Aviyal is a mixture of vegetables,seasoned with coconut oil and curry leaves.It is one of the side dish in Kanyakumari wedding feast.Aviyal is prepared by using vegetables like bottle gourd,cucumber,drumstick,raw banana, brinjal,snake gourd,cluster beans,millet tuber,carrot,raw mango etc...

INGREDIENTS:

coconut water 100ml
Carrot - 1(cut it in 2 inch lengthwise)
Brinjal -1(cut it in 2 inch lengthwise)
Snake gourd -50 gm(cut it in 2 inch lengthwise)
Drumstick - 1 cut it in 2 inch length
Cucumber - 200 gm(cut it in 2 inch lengthwise)
Raw banana/plantain - 1(cut it in 2 inch lengthwise)
Millet tuber- 100 gm(cut it in 2 inch  lengthwise)
Bottle gourd-50 gm(cut it in 2 inch  lengthwise)
Cluster bean-5(cut it in 2 inch lengthwise)
Turmeric powder -2 tspn
Salt - to taste
1/2 lemon juice

TO GRIND:

Green chilli - 6
Coconut - 1 cup
Shallots -2
Cumin seed - 1 tblspn


PICTORIAL :


Take all vegetables and cut it in 2 inch lengthwise


Add  green chillies in a blender 


Grind coarsely and keep aside


Heat a pan and add a cup of coconut water


Add  drumstick


Add  brinjal and bottle gourd


Add millet tuber and carrot


Add snake guard and cluster bean


Add cucumber


Add  raw banana/plantain


Add  salt


Add  2 tspn of turmeric powder


Add coarsely grinded green chilli


Mix well


 Close the lid and cook for few mins


Add  1/2 cup coconut into a blender

Add  2 shallots


Add  a tblspn of cumin seed

Grind coarsely and keep aside


After 10 mts vegetables cooked completely, add  1/2 lemon juice


Add  curry leaves


Add  2 tblspn of coconut oil


Add coarsely grinded coconut 


Mix gently


Cover it with a lid and cook for 30 sec


Delicious aviyal is ready 


Serve with rice 


METHOD:

  • Add green chillies in a blender and grind coarsely.
  • Take all the vegetables in a kadai add 100 ml coconut milk,2 tspn turmeric powder,salt and the coarsely grinded chillies.Cover the lid and cook for few minutes.
  • Meanwhile take a blender add 1/2 cup grated coconut,1 tblspn cumin and 2 shallots.Grind them coarsely and keep aside.
  • After10 minutes vegetables cook completely.Now add 1/2 lemon juice,handful of curry leaves,2 tblspn coconut oil and coarsely grinded coconut mixture.
  • Cover the lid and cook for 30 seconds.Now open the lid,delicious aviyal is ready.
  • Serve with brown rice.
