 IDIYAPPAM RECIPE


              Idiyappam is also known as string hopper,nool puttu,nool appam and sevai.It is originated from the Indian states Tamilnadu and Kerala.My mom prepared idiyappam using idle rice or pulungal arisi.After grinding the rice we get a liquid batter,to make idiyappam we need a thick dough,so cook the liquid batter until it is thick and combined well.Once we prepare the dough fill an Idiappam press or sieve with the dough and squeeze the noodles onto the idle plate and steam it using a idle steamer.Add little grated coconut on top if you want. My mom usually make this Idiyappam as a breakfast and served with masala chutney.Do try this recipe and let me know how it will turned out to you.Now let's check out the recipe...


PREPARATION TIME:30 min

COOKING TIME:7 to 10 min

SERVING:20 Idiyappam

INGREDIENTS:

Idli rice / pulungal arisi - 2 cups
Water as required
Salt as required
Grated coconut as required for garnishing
Coconut oil - 1/2 cup

METHOD:

  • Soak 2 cups of idle rice for 2 hours.After 2 hours grind the soaked rice with required salt and water until it is very smooth and keep aside.
  • Clean the excess batter with 2 cups of water and collected in a separate bowl.
  • Heat 1/2 cup of coconut oil in a kadai,add grounded idiyappam batter and the mixture of collected idiyappam batter and water.Stir continuously. 
  • After few min batter gets thickened and combined well to form thick dough.It dosen't stick to the bottom now switch off the flame and keep aside.
  • After cools down,fill the idiyappam maker with required amount of dough and close the lid.
  • Spread a clean muslin cloth on the idli plate,add grated coconut into the plate,squeeze the batter onto the idle plate,spread some grated coconut on top.
  • Steam it using a idle pot until it is cooked,after 5 to 7 min it is perfectly done.Take it ot and transfer it into a plate.
  • Tasty and soft idiyappam is ready. 

PICTORIAL:

Soak 2 cups of idle rice / pulungal arisi for 2 hours

Add soaked rice in grinder and grind well  using required water

Add required salt and water

grind until it is very smooth and keep aside

Clean the excess batter with 2 cups of water and keep it in a separate bowl

Heat 1/2 cup of coconut oil in a kadai

Add grounded idiyappam batter

Add mixture of collected idiyappam batter and water

mix gently

Stir continuously until it is thickened

After 10 min it gets thickened and combined well to form dough

It dosen't stick to the bottom

Use the small hole mould

After cools down,take some dough and fill the idiyappam maker

Close the lid

Spread a clean muslin cloth on a idle plate,add some grated coconut

Squeeze the batter onto the plate and spread some grated coconut on top
Steam it using a idle pot until it is cooked

After 7 to 10 min it is cooked,take it out and transfer it into a plate

 ADAI DOSAI RECIPE



                  Adai dosa is one of the common breakfast in South India. Generally the ingredients used in this recipe are the combination of lentils like toor dal,channa dal and urad dal.But in Nagercoil we use Idli rice and yellow split pea(in Tamil it is pattani paruppu or vada paruppu)instead of toor dal and channa dal.
                  They are soaked and then grounded coarsely into a thick batter.In addition to that batter includes mixture of coarsely grounded grated coconut,chopped green chillies,chopped shallots and chopped curry leaves.Finally add some cleaned and washed moringa leaves,in Tamil it is murungai keerai to make murungai keerai adai dosai.
                  For grinding,I prefer grinder so i use the dried red chillies directly,if you use mixie soak the dried red chillies then grind it for smooth grinding.You can relish this with avial and coconut chutney.But our personal favourite is coconut chutney.I learn't this recipe from my mom,do try this recipe and let me know how it will turned out to you.Now let's check out the recipe....

SERVING:12 dosa

INGREDIENTS:

Idli rice / Pulungal arisi - 1 cup
Urad dal - 1/2 cup
Yellow split pea / pattani paruppu / vada paruppu - 1 cup
Dried red chillies - 20
Asafoetida - 1/4 tblspn
Salt
Grated coconut - 1 cup
Shallots - 10
Green chillies - 4
Curry leaves - 3 sprig
Drumstick tree leaves / Moringa leaves / Murungai keerai - some
Sesame oil 
Water

PICTORIAL:

In a mixing bowl add 1 cup idle rice / pulungal arisi


Add 1/2 cup urad dal


Soak it for 2 hours


In another mixing bowl take 1 cup yellow split pea/pattani paruppu (It is not channa dal)  and soak it for 2 hours


In a grinder add 20 dried red chillies


Add 1/4 tspn asafoetida


Add required salt and grind well


Add soaked rice and urad dal into it


Add little water to grind until it is thick and little coarsely grounded batter, then keep it aside


Now add soaked yellow split pea


Add little water to grind until it is thick and coarsely grounded batter, then keep it aside


Add 1 cup grated coconut


Add 4 chopped green chillies


Add 10 chopped shallots


Add 3 sprig chopped curry leaves


Grind coarsely


Then add it to the grounded rice and yellow split pea batter


Add some cleaned and washed drumstick tree leaves


Clean the excess batter in the machine with 200 ml water


Add it to the batter


The batter should be little coarsely and the consistency should be like dosa batter


Heat a dosa tawa brush some sesame oil,pour a spoonfull of batter into the tawa


Spread it like this


Drizzle sesame oil on top,cook for few minutes


Flip it and cook for few minutes


Cook both sides until it is crisp and golden in colour


Tasty adai dosai is ready

METHOD:

  • In a mixing bowl add 1 cup idle rice and 1/2 cup urad dal.Soak it for 2 hours.In another mixing mixing bowl add 1 cup yellow split pea.Soak it for 2 hours.
  • In a grinder add 20 dried red chillies,1/4 tspn asafoetida and required salt,grind well.Now add soaked rice and urad dal,add little water to grind until it is thick and little coarsely grounded batter, then keep it aside.
  • Now add soaked yellow split pea,add little water to grind until it is thick and coarsely grounded batter, then keep it aside.
  • Add 1 cup grated coconut,4 chopped green chillies,10 chopped shallots and 3 sprig chopped curry leaves,grind coarsely and mix it with the rice and yellow split pea grounded batter.
  •  Clean the excess batter in the machine with 200 ml water,add it to the adai batter,add some moringa leaves and mix well.The batter should be little coarsely and the consistency should be like dosa batter.
  • Heat a dosa tawa,brush some oil  and pour a spoonful of batter and spread it like dosa,drizzle some sesame oil on top.Cook both sides until it is crisp and golden in colour.
  • Tasty adai dosai is ready.
