 MANGO KESARI


                Rava kesari is a tradtional sweet recipe and can be served in various part of India.Since mangoes are in season,just want to try maampazha kesari or mango sheer.The mangoes used in this recipe are riped,sweetened and non fibrous.Roasted rava helps to make the kesari non sticky.Sugar can be adjusted as per your taste and sweetness of the mango.Cook the rava using hot water otherwise it will form lumps.Do try this simple but delicious sweet recipe.Now let's check out the recipe.


PREPARATION TIME:10 min

COOKING TIME:25 min

INGREDIENTS:

Rava / sooji - 1 cup
Ghee - 200 ml
Cashew nuts - 10 splitted
Raisins - 15
Sugar - 1 cup
Salt - pinch
Hot water - 2 cups
Ripe mango - 3/4 cup(chopped)

METHOD:

  • Heat 100 ml ghee in a heavy bottom kadai,add 10 cashewnuts and 15 raisins,fry it in low medium flame until it is golden brown.
  • Add 1 cup rava into it and fry it in low flame until it turns aromatic.
  • Add 1 cup sugar,saute for 1 min and then add 2 cups of hot water,3/4 cup chopped mangoes, pinch of salt and 100 ml ghee,mix well.
  • Close the lid and cook,after 5 min water evaporated and it cooked completely.Switch off the flame.
  • Tasty maampazha kesari is ready.

PICTORIAL:

heat 100 ml ghee in a heavy bottom kadai

Add 10 cashewnuts

Add 15 raisins

fry it in low medium flame until it is golden brown in colour

Add 1 cup rava / sooji

fry it in low flame until it turns aromatic

Add 1 cup sugar

Saute for 1 min in low flame

Add 2 cups of hot water and mix well

Add 3/4 cup chopped mangoes and mix well

Add 100 ml ghee and mix well

Add a pinch of salt

Close the lid and cook it in low flame

After 5 min water evaporated and cooked completely,inbetween open the lid and mix it once or twice otherwise it will stick to the bottom

Ghee oozes out and now switch off the flame

Tasty maampazha kesari is ready.

 MAAMPAZHA KAADI


             Maampazha kaadi or maampal is a sweat like payasam usually prepared on vaikasi visagam. Beacause vaikasi visagam is Lord Murugan's birthday.On that day we prepare this maampazha kaadi as a naivedyam for Lord Murugan.Use ripe mangoes for this.It is an easy and simple recipe but taste delicious,please do try this and let me know how it will turned out to you. PREPARATION TIME:30 min

COOKING TIME:20 min

INGREDIENTS:

Ripe mangoes - 3
Raw rice - 1 cup
Water - 7 cup
Jaggery - 1 kg
Dried ginger and elachi powder - 3/4 tspn
Coconut milk - 750 ml

METHOD:

  1. In a mixing bowl add 1 cup raw rice,washed and soak it for 1 hour.
  2. After 1 hour,spread the soaked rice on a clean muslin cloth and dry it for 15 min under the fan.
  3. After 15 min,the rice dried and dosen't stick.Add this rice into the mixer jar,grind well and keep aside.
  4.  In a pan add 1 kg jaggery add 2 cup water,melt the jaggery and filter it.
  5. In a thick bottom vessel,add jaggery syrup,5 cups water and chopped mangoes into it.Now switch on the flame.
  6.   Add grounded rice powder into the coconut milk and mix well without any lumps.
  7. Add this mixture into the mango and jaggery syrup mixture,stir continuously otherwise it will stick to the bottom.
  8. After 10 min it is thickened,after it starts boil cook for few more minutes,now stir occassionlly.Then switch off the flame.
  9. Add 3/4 tspn dried ginger and elachi powder and mix well.
  10. Tasty maampazha kaadi is ready.

PICTORIAL:

In a mixing bowl add 1 cup raw rice and soak for 1 hour

Dry it in a clean muslin cloth for 15 min under the fan

After 15 min it dries and dosen't stick

Transfer it into the mixier jar

Grind well 

In a pan add 1 kg jaggery and 2 cup water

Melt the jaggery

Filter the jaggery syrup into the thick bottom vessel

Chopped the mangoes into pieces and keep the sides

Add 3 chopped mangoes

Switch on the flame and add 5 cups of water

Take 750 ml coconut milk

Add powdered raw rice and mix well without any lump

Add this to the mango and jaggery mixture,stir continuously otherwise it will stick to the bottom

After 10 min it thickened and starts boil

Cook for few more min and switch off the flame

Add 3/4 th tspn dried ginger and cardamom powder,mix well

Tasty maampazha kaadi is ready

 MALADU RECIPE


                      Maladu is an easy and popular recipe in South India.It is also know as potukadalai maavu urundai,potukadalai laddu,fried gram laddu and roasted gram laddu.It is one of the favourite snack  for kids.The common ingredients used in this recipe are roasted gram,sugar, ghee,nuts and raisins.
              But today I have prepared this maaladu using roasted gram,sugar and ghee,because I love the plain maladu more than the nut mixed maladu.We can replace sugar by using jaggery(nattu chakkarai).Please do try this easy recipe and let me know how it will turned out to you.Now let's check out the recipe...


PREPARATION TIME:15 min

COOKING TIME:3 min

INGREDIENTS:

Split roasted gram / potukadalai / porikadalai - 250 gm
Sugar - 3/4 cup
Ghee - 1/2 cup

PICTORIAL:


Heat a kadai,add 250 gm roasted gram 


Dry roast it in a medium flame until it's raw smell are gone


After cools down,add dry roasted roasted gram in a mixier jar


Add 3/4 cup sugar


Grind well 


Transfer the powdered roasted gram and sugar in a mixing bowl


Add 1/2 cup melted ghee


Mix well



Make small balls out of it


Tasty maaladu is ready

METHOD:

  • Heat a kadai,add 250 gm roasted gram and dry roast it until it's raw smell are gone.
  • After cools down,add it into the mixier jar,add 3/4 cup sugar and grind well into a smooth powder.
  • Transfer the powdered roasted gram and sugar into a mixing bowl.
  • Add 1/2 cup melted ghee,mix well and make small ball out of it.
  • Tasty maladu is ready.
