MAAMPAZHA CURRY
I love mangoes,we can prepare so many dishes using mangoes but I used to prepare maampazha curry during mango season.It is a most common dish in Nagercoil region.It is prepared using ripe mangoes and grated coconut.The ripe mangoes are cooked along with grounded coconut mixture curry.During "Chithra pournami" we used to make maampazha curry and keerai kootu.I learn't this recipe from my mom,please do try this recipe and let me know how it will turned out to you.now let's check out the recipe...

COOKING TIME:20 min
INGREDIENTS:
Ripe mangoes - 3
Virali manjal / turmeric powder - small piece
Dried red chillies - 5
Grated coconut - 1 cup
Cumin - 1 tspn
Shallots - 3
Salt as reqired
Water as reqired
Coconut oil - 1 tblspn
Mustard - 1/2 tspn
Curry leaves - 1 sprig
PICTORIAL:
Peel the skin and chop the mangoes,keep aside
Add small piece of virali manjal in a mortar
Add 5 dried red chillies
Add 1 cup grated coconut
Grind little coarsely
Add 1 tspn cumin and 3 shallots,grind well
Coarsely grounded coconut mixture
In a earthenware vessel add required water and grounded coconut mixture
Mix well and add required salt
Wait to boil
Cook until raw smell are gone
Add chopped mangoes
Add a tblspn of sugar and mix well,cook for 1 more min
Heat a tblspn of oil in a kadai
Add 1/2 tspn mustard
After it splutters add 1 sprig curry leaves,saute well
Add tempering to the maampazha curry
Mix well and switch off the flame
Tasty maampazha curry is ready
METHOD:
- Peel the skin and chopped the mangoes.
- In a mortar add small piece virali manjal,5 dried red chillies,1 cup grated coconut,1 tspn cumin and 3 shallots,grind until it is little coarsely.
- In a earthenware vessel,add required water,grounded coconut mixture and salt,mix well and wait to boil.
- Cook until the raw smell are gone,add chopped mangoes and cook for 1 more min.
- Heat a tblspn of coconut oil in a kadai,add 1/2 tspn mustard after it splutters add 1 sprig curry leaves,saute well and pour it over the curry.
- Tasty maampazha curry is ready.
