VEGETABLE CUTLET

Vegetable cutlet is a very popular snack recipe.It is served as a evening snack with a cup of coffee or tea.It is a perfect snack during rainy season.The shape of the cutlet can be made as per your preference.The cutlet can be deep fried,shallow fried and baked.This is my aunty's version, please do try it at home and let me know how it turns out to you.



PREPARATION TIME : 30 MINS

COOKING TIME : 15 MINS

INGREDIENTS :
Potatos - 4 medium size
Carrot - 100 gms / 1 cup
Green beans - 100 gms / 1 cup
Green peas - 100 gms / 1 cup
Cabbage - 100 gms/1 cup
Ginger Garlic paste - 1 tbspn
Green chilli -2 
Onion - 1 cup
Cashew nut - 10
Coriander leaves - 1 handful
Garam masala powder - 2 tspn
Red chilli powder -1 tblspn
Turmeric powder - 2 tspn
Black pepper powder- 2 tspn
Oil - to deep fry
Salt - to taste

FOR COATING
Maida - 1 cup
Bread crumbs - 2 cups
Water - to mix
Salt - to taste

PICTORIAL :

Take four potatoes


Cut the potatoes in half 


Add required water to boil potatoes


pressure cook for 4 whistles


Take a pan and add in 4 tblspn oil


Add  cashew nut


Add onions


Add  green chilli


Add in a tblspn of ginger garlic paste


Add finely chopped beans


Add  finely chopped carrot


Add green peas


Add  finely chopped cabbage


Add 2tspn turmeric powder


Add in salt


Mix well,close the lid and cook for 5 mins


Add  garam masala


Add  red chilli powder


Add black pepper powder


Add  coriander leaves


Mix well 


Add  boiled potatoes and mashed well


After mashing we will get like this


make it as small balls


In another bowl take little maida and add 1/4 th tspn salt  


Add little water to make batter without any lumps


Take breadcrumbs in a bowl


Take a ball  and coat well in a maida mixture


Then coat well in a breadcrumbs


Shape it like basic round or like patties

 Keep it in the freezer for 15 to 30 mins


Add cutlet into the oil slowly


Fry it  in medium flame


Flip over and fry it other side 


Fry it till golden brown


 Serve hot with tomato sauce

METHOD
     
           1.Take 4 potatoes and pressure cook for 5 whistle.
           2.Take a pan add 4 tblspn oil.
           3.Add cashew nuts and fry it till golden now add finely chopped onions and saute well.
          4.Now add green chillies and ginger garlic paste and saute well.
          5.Then add finely chopped beans,carrot,cabbage and frozen peas and saute well.
          6.Add 2 tspn turmeric powder and salt.Mix well and close the lid and cook for 5 mts.
          7.Now add 2 tspn garam masala,1 tblspn chilli powder,2 tspn pepper powder and handful of corriander leaves.
          8.Then add boiled potatoes.Mash well and combined,then make it as a small balls.
          9.Now prepare a batter by mixing 5 tblspn maida and 1/4 tspn salt,add 1/4 cup water to  make a lump free batter.
         10.Now take ball sized vegetable mixture and dip it in the maida batter and then coated with bread crumbs and make it as a normal round shape.
         11.Deep fry in hot oil,stir occasionally and fry to golden brown.
         12.Finally serve it with tomato sauce
