COUNTRY CHICKEN FRY / NATTU KOZHI FRY RECIPE

         Simple and spicy nattu kozhi fry but taste delicious.Cleaned and washed chicken pieces are first cooked well and then marinated in freshly grounded red chilli flakes and salt mixture,later stir fry it in coconut oil until raw smell turns aromatic and slighty crisp brown colour on outside.I learn't this recipe from my mom,please do try this recipe.Now let's check out the recipe....



PREPARATION TIME:20 min

COOKING TIME:40 min

INGREDIENTS:

Chicken pieces / nattu kozhi - 1/2 kg
Turmeric powder - 1/2 tspn
Ginger garlic paste - 2 tblspn
Dried red chillies - 15
Salt - 1 and 1/2 tblspn
Coconut oil 3 tblspn
Water - 2 cup

PICTORIAL:


Clean and washed nattu kozhi pieces 1/2 kg


Add 2 tblspn ginger garlic paste and 1/2 tspn turmeric powder


Mix well


Heat a wide mouth copper vessel with 2 cup water,add marinated chicken pieces


Close the lid and cook for 40 min


In a blender add 15 dried red chillies and 1 and 1/2 tblspn salt


Grind well to get chilli flakes


After 40 min chicken cooked


Transferred into a bowl


Add 3 tblspn grounded red chilli flakes


Marinate well and rest for 1/2 an hour


Heat a kadai with 3 tblspn coconut oil


Add marinated chicken pieces


Stir occasionally until raw smell of the spices are gone,otherwise it stick to the bottom


After few min it start changes it's colour,stir occasionally


Stir fry until it turns aromatic and brown in colour


Delicious spicy country chicken roast is ready

METHOD:

  • Marinate the chicken with 2 tblspn ginger garlic paste and       1/2 tspn turmeric powder.
  • Heat 2 cup water in a wide mouth copper vessel ,add marinated chicken pieces into it and close the lid and cook for 40 min..
  • In a blender add 15 dried red chillies and 1 and 1/2 tblspn salt,grind well to get chilli flakes.
  • After 40 min chicken cooked well,transferred it into a bowl.Add 3 tblspn red chilli flakes and marinate well,keep aside for 30 min.
  • Heat 3 tblspn coconut oil in a kadai,add marinated chicken pieces,stir fry until raw smell of the spices are gone.  
  • Stir occasionally otherwise it stick to the bottom. After few min it turns aromatic and brown in colour.Now switch off the flame.
  • Delicious and spicy country chicken roast is ready.

 NATTU KOZHI KUZHAMBU


               Nattu kozhi is very much preferred for it's nutritional benefit as well as taste.The flesh of this chicken is more tastier than the broyler chicken.It is one of the popular recipe in Nagercoil region.The marinated chicken pieces are added to the roasted shallot mixture and then cooked with the coconut milk and some seasoning ingredients.
               It takes quite long time to prepare this curry,because I make this curry in a wide mouth copper vessel,but once you have it taste,delicious.I learn't this recipe from my mom,do try this recipe.Now let's start the recipe....


PREPARATION TIME:20 min

COOKING TIME:1 hour

INGREDIENTS:

Turmeric powder - 3/4 tspn
Garlic - 20 
Ginger - 25 gm
Nattu kozhi / chicken - 1 kg
Coconut oil - 3 tblspn
Shallots - 35 cut it into half
Mustard - 1/2 tblspn
Cinnamon - 1 stick
Star anise - 5
curry leaves - some
Chicken masala - 2 tblspn
Red chilli powder - 1 and 1/2 tblspn
Coriander powder - 3/4 tblspn
Salt

FOR COCONUT MILK EXTRACT:

Grated coconut - 1/2 coconut 
Water - 3 cups
First extracted coconut milk - 1 and 1/2 cup
Second extracted coconut milk - 1 and 1/2 cup

PICTORIAL:


In a mixie jar add 3/4 tspn turmeric powder


Add 20 garlic


Add 25 gm ginger


Grind well to get ginger garlic paste


Take 1 kg washed and cleaned nattu kozhi pieces



Add ginger garlic paste


Marinate well and keep aside


Heat a wide mouth copper vessel with 3 tblspn coconut oil


Add 1/2 tblspn mustard,once it splutters add small piece cinnamon stick,5 star anise and some curry leaves.


Add 35 shallots(cut it into half)


Saute well until it is light golden in colour


Add marinated chicken pieces


Close the lid and cook for few min.


After 5 to 10 min water oozes out from the chicken pieces


Add 1 and 1/2 cup of 2nd extracted coconut milk


Mix well.Close the lid and cook for 40 min.


Take 1 and 1/2 cup of 1st extracted coconut milk


Add 2 tblspn chicken curry masala


Add 3/4 th tblspn coriander powder


Add 1 and 1/2 tblspn red chilli powder


After 40 min chicken cooked and the milk evaporated


Add 1st extracted coconut milk mixture to it.


Mix well and wait to boil.


Once it starts boil,add required salt and cook until raw smell of the spices are gone.


After few min,it turns aromatic now switch off the flame.


Spicy nattu kozhi curry is ready.

METHOD:

  • In a blender add 3/4 tspn turmeric powder,20 garlic and 25 gm ginger.Grind well to get ginger garlic paste.Add ginger garlic paste to the chicken pieces,marinate well and keep aside for 1/2 an hour.
  • Heat a wide mouth copper vessel with 3 tblspn coconut oil.Add 1/2 tblspn mustard,after it splutters add cinnamon stick,5 star anise and curry leaves,saute well.
  • Add 35 shallots,saute until it is light golden in colour.Add marinated chicken pieces and close the lid.Cook for few minutes.
  • After 5 to 10 min water oozes out from the chicken pieces,now add 1 and 1/2 cup of second extraced coconut milk and close the lid and cook for 40 min.After 40 min chicken cooked and the milk evaporated.
  • Now add 1 and a 1/2 cup of first extracted coconut milk,2 tblspn chicken curry masala,1 and 1/2 tblspn red chilli powder and 3/4 tblspn coriander powder to it.Mix well and wait to boil. 
  • Once it boils add required salt and cook until raw smell of the spices are gone.After few min it turns aromatic,now switch off the flame.
  • Spicy nattu kozhi kuzhambu is ready.

FRIED CHICKEN/KFC FRIED CHICKEN


        My brother loves KFC Fried chicken but during this lockdown period we cannot get easily so we tried making at home.Seasoned flour mixture adds crunchy coating to the outer and the curd adds retaining the juice in the meats.




PREPARATION TIME : 10 MINS 

MARINATING TIME : 5 TO 6 HOURS

COOKING TIME : 30 MINS

INGREDIENTS :

Chicken leg piece - 10
Egg  - 3
Oats - 1 cup 
Maida - 1 cup
Corn flour - 1 cup
Red chilli powder - 3 tblspn
Garam masala powder -2 tblspn
Turmeric powder - 2 tspn
Black pepper powder -2 tblspn
Salt to taste

For marination

Ginger garlic paste - 2 tblspn
Juice from 2 lemon
Curd - 3 tblspn cup
Salt 

PICTORIAL :

Take chicken piece 


Add salt 


Add 3 tblspn curd


Add 2 tblspn of ginger garlic paste


Add  lemon juice


Mix well and keep it aside for 5 hours


Take a plate and add a cup of maida 


Add 1 cup corn flour


Add a cup of oats


Add 3 tblspn of red chilli powder


Add 2 tspn of turmeric powder


Add 2 tblspn of garam masala powder


Add 2 tblspn of black pepper powder


Add  salt


Mix well and keep aside


Take another bowl and add 3 egg 



Beat well and keep aside



Take 1 piece marinated chicken and dip it in egg mixture 



Then coat it in maida,oats mixture 



Again dip it in egg mix


Then coat it again in maida,oats mixture


Coated pieces look like this and keep it aside


Heat a kadai and pour oil for deep frying 


After the oil gets heated,add coated chicken pieces


Keep the flame in medium,fry until it is golden 



Delicious KFC fried chicken is ready to serve.

METHOD:

  1. Marinate the chicken piece with salt,3tblspn curd,2tblspn ginger garlic paste,juice from 2 lemon and keep aside for 5 hours.
  2. Take 3 eggs in another bowl and beat well.
  3. In a plate add 1 cup maida,1 cup cornflour,1cup oats,3tblspn chilli powder,2 tblspn garam masala,2 tblspn pepper powder,      2 tspn turmeric powder and salt.Mix well and keep aside.
  4. After 5 hrs take a piece of marinated chicken,dip it in the egg mix and then coated in maida,oats mixture,again dip it egg mix and then coat again in maida,oats mixture.Repeat the steps for all the chicken piece.
  5. Fry the coated chicken pieces in medium hot oil,until it is golden.
  6. Yummy,tasty and juicy KFC fried chicken is ready to serve.
