 PINEAPPLE PULISERRY


                     Pulissery is a traditional Kerala dish made using yogurt and grated coconut.Pineapple pulissery is one among the dish in Kanyakumari wedding feast.
        *Pineapple which I had used in this recipe is very sweetened so I didn't use sugar for sweetness.If the pineapple is sour add some sugar to balance the taste.
        *Use thick curd,beat well without adding water before adding it to pulissery.
        *After adding it to pulissery don't let to boil.

PREPARATION TIME:20 min

COOKING TIME:20 min

INGREDIENTS:

Chopped pineapple - 2 cups
Water - 2 and 1/2 cups
Grated coconut - 1 cup
Cumin - 1/4 tspn
Shallot - 3
Salt as required
Curd - 2 cups

For  the tempering:

Coconut oil - 1 tblspn
Mustard - 1/2 tblspn
Red chillies - 3 
Fenugreek - 1/4 tspn
Curry leaves 1 sprig

PICTORIAL:

Heat a heavy bottom pan with 1 and 1/2 cup water


Add chopped pineapple pieces


Add 3 slitted green chillies


Add 1/4 tspn turmeric powder


Add 1/2 tspn red chilli powder


Mix well


Close the lid and cook well


In a mixer jar add 1 cup grated coconut


Add 1/4 tspn cumin


Add 3 shallots


Grind well into a smooth paste


After the pineapple cooked,add grounded coconut mixture into it.


Add 1 cup water,mix well and wait to boil


Cook until raw smell are gone



Add required salt and mix well


Add 1 and 1/2 cup curd


Mix well,don't let to boil and switch off the flame.


Heat a tablspn of coconut oil in a kadai


Add 1/2 tspn mustard


After it splutters add 3 green chillies


Add 1/4 tspn fenugreek


After it splutter add curry leaves and saute well


Pour it over pulissery and mix well



Tasty pineapple pulissery is ready

METHOD:

  • In a heavy bottom pan add 1 and 1/2 cup water and 2 cup chopped pineapple pieces,close the lid and cook.
  • In a mixer jar add 1 cup grated coconut,1/4 tspn cumin and 3 shallots,grind well into a smooth paste and keep aside.
  • After few min pineapple cooked well,add grounded coconut mixture into it and add required salt and mix well.Cook until raw smell are gone.
  • Add 1 and 1/2 cup curd into it and don't let to boil,just heat the curry and switch off the flame.
  • Heat a tblspn of coconut oil in a kadai,add 1/2 tspn mustard after it splutters add 3 red chillies,1/4 tspn fenugreek after it splutters add 1 sprig curry leaves,saute well and pour it over the pulissery.Mix well.
  • Tasty pineapple pulissery is ready.
