NAVARATHRI NAIVEDHYAM ULUNTHU VADAI 



              For Navarathri usually we make 9 dishes for naiveidhyam at 9 th day.Ulunthu vadai is one among the main naiveidhyam for Goddess Durga in Nagercoil .Since it is a naiveidhyam we should not use onion,garlic or any other seasoning for this recipe.

PREPARATION TIME:20 min

COOKING TIME:15 min

INGREDIENTS:

Urad dal - 100 gm
Asafoetida - 1/4 tspn
Pepper - 1/4 tspn
Grated coconut - 2 tblspn
Chopped curry leaves - 2 string
Coconut oil for deep frying
Salt

PICTORIAL:


Add 100 gm soaked urad dal into the mortar.You can use blender or wet grinder for grinding it.


Add 1/4 tspn asafoetida 


Grind well until it is smooth and fluffy.Do not use water while grinding it.If needed just springle some water.The consistency of the batter should be thick.


Add required salt and grind until salt mixes well


Add 2 tblspn grated coconut and coarsely grind it


Smooth and fluffy urad dal batter


Transfer it into a bowl


Add 1/4 tspn pepper


Add 2 strings of chopped curry leaves


Mix well and the vadai batter is ready.


Take small amount of the batter

 
Add drop it in the hot oil


Like this


Fry both sides until crisp and golden


Drain the excess oil


Tasty ulunthu vadai is ready

METHOD:

  • Soak 100 gm urad dal for 1 hour.
  • Grind well until it is smooth and fluffy batter with 1/4 tspn asafoetida.Do not use water while grinding it.The consistency of the batter should be thick.
  • Add required salt to the batter and grind until salt mixes well.Then add 2 tblspn grated coconut,coarsely grind it and transfer it into a bowl.
  • Now add 1/4 tspn pepper and 2 strings of chopped curry leaves into the batter and mix well.Vadai batter is ready.
  • Heat a kadai with coconut oil for deep frying.
  • From the vadai batter,take small amount of the batter and drop it in the hot oil.Fry both sides,until it is crisp and golden.
  • Drain the excess oil and the delicious ulunthu vadai is ready.
