SNAKE GOURD STIR FRY
Snake gourd stir fry is an easy and simple recipe that anyone can prepare at home.Snake gourd is also known as pudalangai in Tamil.Always choose a tender snake gourd,cut the snake gourd vertically into two half and scrap the inner white layer,then chop the snake gourd into small pieces.

PREPARATION TIME:30 min
COOKING TIME:20 min
INGREDIENTS:
Snake gourd - 1/2 (medium size length)
Shallot - 10
Green chillies - 2
Coconut oil - 1 tblspn
Mustard - 1/2 tspn
Curry leaves - 1 sprig
Red chillies - 3
Grated coconut - 1/4 cup
Salt as required
PICTORIAL:
In a grind stone add required salt
Add 3 red chillies
Grind well
Add 1/4 cup grated cconut
Grind coarsely
Heat a tblspn of coconut oil in a kadai
Add 1/2 tspn mustard
Add 1 sprig of curry leaves
Add 10 finely chopped shallots
Add 2 chopped green chillies
Saute for a minute
Add chopped snake gourd (medium size 1/2 snake gourd)
Stir continuously
After few min it shrinks and start changes it's colour
Stir fry until is completely cooked
Add grounded coconut mixture
Saute for a minute
Perfectly done,switch off the flame
Tasty snack gourd stir fry is ready.
METHOD:
- In a grind stone add 3 red chillies and required salt,grind well like a smooth paste.Then add 1/4 cup grated coconut,grind coarsely and keep aside.
- Heat 1 tblspn coconut oil in a kadai,add 1/2 tspn mustard after it splutters add curry leaves,10 finely chopped shallpt,2 finely chopped green chillies.
- Saute for a min.Then add chopped snack gourd,stir fry until it is cooked well.Once it cooked it changes it's colour and shrinks.
- Now add coarsely grinded coconut mixture,stir fry it for a min and switch off the flame.
- Tasty snake gourd stir fry is ready.
