CHAKKA VARATIYATHU/CHAKKA VARATTI
Chakka means jack fruit in Malayalam,varatiyathu means no moisture.Jack fruits are available in a particular seasons.So preserve jack fruit for long time by this method.Using this chakka varatti we can make chakka pradhaman(payasam).
PREPARATION TIME:10 MINS
COOKING TIME : 30 MINS
INGREDIENTS :
Ghee - 3 tblspn
Jack fruit - 200 gm
Jaggery - 750 gm
Cashew nut - 10
Dry ginger powder - 1tblspn
Elachi powder - 1tblspn
PICTORIAL :
Take jack fruit,remove the seed and keep aside
Chop the jack fruit into small pieces given above
Heat a non stick pan and add 3 tblspn ghee
Saute for 2 minutes in low flame
After jackfruit gets soft add crushed jaggery.I am using non dusted jaggery so I use it directly without filtering it.If you are using the normal jaggery make sure to remove the impurities and then added to it
METHOD:
- Chop the jack fruit into small pieces.
- Heat a pan and add 3 tblspn of ghee.
- Add chopped jack fruit and saute for 2 mins and add 1/2 cup of water and cook for 1 min
- Add roughly chopped jaggery and mix until it dissolves completely.
- After few min it starts boiling now add dry ginger powder,elachi powder and cashew nuts.
- Few min later,it starts thickening and stir continuously,after 3 to 4 min it dosen't stick to the pan.Now delicious chakka varatti is ready.
- After it cools down completely transfer it into a glass jar and store it in a refrigerator for 1 year.
