NARTHANGAI PACHADI
Narthangai pachadi is one of the side dish in Kanyakumari wedding feast.Use sesame oil/gingelly oil for saute the vegetables it gives nice flavour to that recipe.
The pith of the citron is sweet while the flesh itself sour or bitter,shallots have sweet flavour,green chillies have hot and spicy taste,tamarind have sour-sweet flavours.So this recipe almost have all flavours.

INGREDIENTS:
Citron - 1/2 finely chopped
Green chillies -3 finely chopped
Shallots - 25 cut it into half
sesame oil/Gingelly oil - 3 tblspn
Mustard - 1 tblspn
Curry leaves - 1 string
Tamarind - small amla size
Red chilli powder - 2 tblspn
Coriander powder -1 tblspn
Jaggery - 2 tblspn
Salt
Water
PICTORIAL:
Add chopped green chillies
METHOD:
- Saute the chopped citron for 2 min using sesame oil and keep aside.
- In the same oil add mustard after it splutters add curry leaves,3 chopped green chillies and 25 shallots.Saute until it is golden and keep aside.
- In a earthenware pan add sauted citron and shallot mixture.Then add 2cup water and salt.Cover it and cook until citromn cooks well
- After 10 min citron cooks well then add 2 tblspn red chilli powder,1 tblspn coriander powder,2 tblspn jaggery,1/4 cup tamarind water and 1/4 cup water.Cook until raw smell of the spices are gone.
- After 6 min yummy narthangai pachadi is ready.Serve with curd rice or sambar satham.Taste delicious.
